Yeah, I know I’m not pregnant. And, actually I’m not barefoot there, either. But I can be your Best Friend in the Kitchen by giving you some of my favorite recipes. So, this is where I will be doing it. I try to stick to a low-carb diet while Gary is vegan, so my recipes are all over the place – figuratively and literally (and if you saw my kitchen, you’d know what I mean).
Sweet Potato Ravioli
1 1/2 pounds sweet potatoes
2 T brown sugar
1/4 teas. nutmeg
48 wonton wrappers (or make them yourself)
2 large egg whites, beaten until foamy
**Brown Butter Sauce**
3/4 cup butter
1 1/2 T balsamic vinegar
1 1/2 T fresh thyme
Prick potatoes; microwave on high for 12 minutes (turn over after 6). Cool, cut in half, scoop out. Mix in brown sugar and nutmeg. Season with salt and pepper.
Using a heavily floured surface, place one wonton wrapper down, brush lightly with egg white then place 1T sweet potato mix. Top with another wrapper and press edges together to seal. Cook in boiling salted water for 3-4 minutes.
Sauce: Melt the butter over medium heat until it browns. CAREFULLY mix in vinegar and thyme
Pour sauce over ravioli. Yum
If you want to make your own wonton wrappers (like I did), use this recipe:
1 Egg
3/4 teas salt
2 cups flour
1/3 – 1/2 cup water, as needed
Lightly beat egg with salt. Add 1/4 cup water. Sift flour into large bowl. Make a well in the middle; add the egg and water mixture. Mix. Add water if necessary to form dough. Knead for about 5 minutes until smooth and workable. Cover and let rest for 30 minutes. Turn out on floured surface, roll very thin and cut into 3 1/2 squares.
